Sage and Onion Stuffing Recipe

Ingredients

* 4 large onions
* 10 sage leaves or 2 teaspoons of dried sage
* 125g/¼lb of fine breadcrumbs
* 40g/1½oz butter
* 1 egg
* salt and pepper to taste

Preparation method

1. Peel all the onions, put them into boiling water and simmer for 5 minutes or until cooked.Just before they are ready, put in the sage-leaves two minutes to blanch.

2. Chop both the onions and sage very finely, mix with the bread crumbs, seasoning and butter.
Combine together with the yolk of an egg. The stuffing is now ready for use.

3. Parboiling the onions makes a mild-flavoured stuffing.
